Structure, structure, structure. Many winemakers seek it, few achieve it with regularity. It is a product of monitoring the vineyards during the growing season, harvesting the grapes at the perfect time, and skillfully guiding the wine through fermentation and aging. Joe Dobbes has mastered all of these steps in Oregon so all you have to do is pull the cork. Aromas and flavors of raspberry, juicy cherry, rose petal, tangerine and spicy oak pair well with Copper River salmon.
